Baked beans is a dish containing beans, sometimes baked but, despite the name, usually stewed, in a sauce. Most commercially canned baked beans are made from haricot beans, also known as navy beans (a variety of Phaseolus vulgaris) in a sauce. In Ireland and the United Kingdom, a tomato sauce is most commonly used, and they are commonly eaten on toast or as part of a full English, Scottish, or Irish Breakfast.
- 2 cups navy beans
- 1/4 cup brown sugar
- 1/2 pound bacon
- 3 tablespoons molasses
- 2 teaspoons salt
- 1 onion, finely diced
- 1/4 teaspoon ground black pepper
- 1/2 cup ketchup
- 1/4 teaspoon dry mustard
- 1 tablespoon Worcestershire sauce
Step 1: First of all, you need to soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
Step 2: Now heat oven to 325 degrees F (165 degrees C).
Step 3: After that you need to arrange the beans in a 2 quart bean pot and layering them with bacon and onion.
Step 4: In a saucepan, combine molasses, pepper, salt, dry mustard, Worcestershire sauce, ketchup and brown sugar. Bring the mixture to a boil and pour over beans. To cover the beans pour in just enough of the reserved bean water. Cover the dish with a lid or aluminum foil.
Step 5: Until beans are tender, bake for 3 to 4 hours in the preheated oven. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.
