  • 100g unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup caster sugar
  • 2 eggs
  • 1 1/4 cups of self-raising flour (sifted).
  • 2 tablespoon cocoa powder
  • Electric mixer
  • 2 Bowl
  • Spoon
  • Muffin/cupcake pan
  • Wire rack
  • Scissors
  • Snap lock bag
  • Coffee icing
  • 75g unsalted butter (softened)
  • 1 cup icing sugar mixture (sifted)
  • 1 tablespoon coffee essence
  • Chocolate sprinkles to decorate


Step 1: Preheat oven to 170°C.

Step 2: Grease muffin pan.

Step 3: Swiftly beat butter, vanilla, sugar with an electric beater until light and fluffy.

Step 4: Slowly crack 1 egg at a time, beating after adding (wash hands).

Step 5: Conscientiously transfer the mixture into a large bowl.

Step 6: Attentively stir in HALF the flour, cocoa and milk and then stir in the other half.

Step 7: Delicately pour in the mixture into the muffin/cupcake pan.

Step 8 : Bake for 10-12 min.

Step 9: Anxiously take out the cupcakes out of the pan.

Step 10: Patiently wait for cupcakes to cool.

Icing :

Step 12: Rapidly whip the butter until light and fluffy then add in icing sugar and coffee essence.

Step 13: Spoon mixture into a snap lock bag.

Step 14: Snip a 1cm triangle from one corner of the bag.

Step 15: Accurately pipe mixture onto the cupcakes.

Step 16: Randomly sprinkle chocolate sprinkles onto cupcake.
