How To Make Delicious Shortbread

Try making these easy, buttery biscuits as homemade Christmas presents, with chocolate chips worked into the dough.

  • 250g of western star butter, softened
  • 2/3 cups of pure icing sugar
  • 1cup of rice flour
  • 1 teaspoon of caster sugar, for sprinkling

Step One : Place all the ingredients into the bowl expect caster sugar.

Step Two : Add butter into the bowl then stir.

Step Three : Rub your hands onto the mixture until you have fine breadcrumbs.

Step Four : Press mixture together until it forms a dough.

Step Five : Then divide the dough into two.

Step Six : Roll out the dough between two sheets of baking paper until it’s 5mm thick.

Step Seven : Using a star shaped cutter cut star shaped pieces then transfer the star shapes onto prepared trays.

Step Eight : Sprinkle caster sugar if desired.

Step Nine : Bake at 160 degrees for 30 minutes or until dry and firm but still pale.

Step Ten : Transfer to a wire rack to cool completely .

Step Eleven : Dust the shortbread with icing sugar.

Hint: shortbread will keep in an alright container for up to 1 month. Thank you !
