Mexican Rice : Full Recipe

If you’ve ever attempted your favorite Mexican restaurant’s rice at home and failed, raise your hand. Well, you can put it down now, because this one is my all-time family favorite and I think it will become yours, too. To be honest, I like it so much better than the rice usually served when I dine out.

Restaurant-Style Mexican Rice
Ingredients :

1/2 green bell pepper, finely chopped

1/2 onion, finely chopped

1/2 cup chopped fresh cilantro

1/2 teaspoon ground cumin

1 cup long grain white rice

1 fresh jalapeno pepper, chopped

1 tablespoon vegetable oil

1 tomato, seeded and chopped

1 clove garlic, halved

1 cube chicken bouillon

1 1/2 cups chicken broth

Salt and pepper to taste

In a medium sauce pan, cook rice in oil over medium heat for about 3 minutes. Pour in chicken broth & bring to a boil. Now mix in green pepper, onion, jalapeno and diced tomato. Then season with bouillon cube, pepper and salt, cumin, garlic and cilantro. Now carry to a boil, cover and decrease heat to low. Cook for 20 minutes.
