A crispy meringue is simply irresistible especially when filled with seasonal fruit.
If you follow these steps you will have a DELICIOUS passionfruit and mango pavlova!!!!
- 4 egg whites
- 1 cup of caster sugar
- 1 teaspoon of white vinegar
- 2 cups of thickened cream
- 2 thinly sliced mangoes
- 6 passionfruit (pulp removed)
Step 1. Preheat oven to 140c
Step 2. Line a baking tray with non-stick baking paper
Step 3. Place egg whites in the bowl of an electric mixer and beat until soft peaks form.
Step 4. Gradually add the caster sugar a little at a time, beating well between each addition until thick and glossy, fold through the White vinegar.
Step 5. Transfer the mixture to the prepared tray and, using a large spatula form into a disc shape.
Step 6. Place in preheated oven and bake for 1 hour and 15 minutes or until a skewer inserted into the centre comes out clean.
Step 7. Turn off the oven and allow the pavlova to cool for 1-2 hours.
Step 8. Whip cream until medium peaks form and spread over the cooked pavlova.
Step 9. Place the sliced mangoes and passionfruit on top of the pavlova.
