Potato salad is a dish made from boiled potatoes and a variety of other ingredients. It is generally considered a side dish, as it usually accompanies the main course. Bacon gives a meaty touch to this creamy potato salad which is sure to become a favourite at every barbecue and picnic. So, let’s start…
Ingredients
- 8-10 medium size red potatoes
- 1 pound bacon, chopped
- 10 eggs
- ¼ cup sour cream
- 1 and a ½ to 2 cups of mayo
- 2 teaspoon onion powder
- ¼ cup dill weed seasoning
- salt and pepper to taste
Directions
Step 1: At first, you need to cook chopped bacon in a large frying pan.
Step 2: Meanwhile, the bacon is cooking, wash and cut your red potatoes into medium bite size pieces. Put in a large pot and fill with cold water.
Step 3: Until tender, boil potatoes but but not too soft. Clear out, Do not rinse.
Step 4: In a wide baking dish, lay drained potatoes with paper towels in the bottom.
Step 5: Start to boil 10 eggs (at the same time as you start the potatoes and bacon).
Step 6 : When covering the eggs in the pot, use cold water as well . Once the eggs start to boil, turn OFF burner. (But leave pan on the hot burner.) Put lid on for 12 minutes.
Step 7 : Peel the shells off the eggs. Cut the eggs in half and pop out the yolks, set aside. Cut the rest of the egg whites into bite size pieces.
Step 8: To a large mixing bowl, put the yolks with the sour cream, mayo,dill weed, salt, onion powder and pepper. Mix together until creamy.
Step 9: Add potatoes to the creamy egg mixture when they are cooled. Add the chopped egg whites and crispy bacon. Until all combined, stir and fold softly. Refrigerate until ready to serve.
Step 10: If serving outside, put a container or larger sized bowl full of ice and set the bowl of this salad into the ice. It keeps it cool and safe for every one to enjoy!
