Red Velvet cake is traditionally a red, red-brown, or “mahogany” colored layer cake, layered with white cream cheese icing or Ermine frosting. It has a distinctive fluffy texture owing to the gas-producing reaction of alkaline buttermilk with acidic vinegar and/or acidic non-alkalized cocoa.

Ingredients

  • 2 cups all-purpose flour, spooned and leveled, plus more for the pans
  • 1 cup (2 sticks) unsalted butter, at room temperature, plus more for the pans
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1½ cups sugar
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 2 teaspoons apple cider vinegar
  • 1 cup buttermilk
  • 1 tablespoon red food coloring
  • Cream Cheese Frosting

Directions

Step 1: First of all, you need to heat oven to 350° F.

Step 2: Butter two 8-inch round cake pans and dust with flour, tapping out the excess.

Step 3: Whisk together the flour, cocoa, baking soda, and salt in a medium bowl: set aside.

Step 4: Beat the butter and sugar on medium-high using an electric mixer until fluffy, 2 to 3 minutes.

Step 5: Until incorporated beat in the eggs, vinegar, vanilla, and food coloring , scraping down the sides of the bowl as necessary.

Step 6: Now, you need to reduce mixer speed to low.

Step 7: Add the flour mixture in 3 additions and the buttermilk in 2 additions, beginning and ending with the flour mixture.

Step 8: Mix just until combined.

Note: Do not overmix.

Step 9: Divide the batter between bake and the prepared pans until a toothpick inserted in the center comes out clean, 40 to 45 minutes.

Step 10: For 15 minutes, cool the cakes in the pans, then turn out onto racks to cool completely.

Step 11: Now, you need to transfer one of the cooled cakes to a plate and spread with 1 to 1½ cups of the frosting.

Step 12: Top with the remaining cake and spread the top and sides with the remaining frosting.

Step 13: Finally, you need to refrigerate it for 30 minutes before serving.
